What if i cut my catylatic converters off?

-I have an 03 f150 with 4 catylatic converters all stock. i recently put true dual flowmaster 10 series, with 3 inch dumps. What would be good and bad about replacing all four with two high flow cats instead? i have a hypertech programmer to clear any CE lights. i am not going to replace the flowmasters i absolutely love the tone it gives my truck. dont even tell me i need glass packs, they sound like crap. my local shop claims it should be ok but i want a second opinion. I checked and it IS legal to replace four cats with two. as long as i have them its ok in texas.
